This coffee is hand-picked to ensure that only ripe cherry is selected for processing. After harvest, the coffee is rested and pulped before being fermented for around 36 hours. This fermentation process helps to create interesting flavours in washed coffees. After fermentation, the coffee is washed to remove any remaining mucilage and then placed to dry on tarpaulin mats on the ground, where it dries for two weeks.
Pedro Garcia Diaz owns 4-hectares of land located in the San Francisco village in the district of San Jose del Alto district. He cultivates Bourbon, Tabi, and Pache varieties of coffee and produces around 80 bags of coffee per year that are available for export. Together with his family, he takes great care of the land and trees. During the harvest season, they maintain a strong focus on quality, picking only the ripe cherries.
